We're going to Denver for Christmas! I'm so pumped. I bought Brent tickets to see the Broncos vs. Bills game :) We'll fly out the last day of finals and spend a couple of days in the city and then fly out the day after the game. I'm really really excited for it. I can't wait. And then the next day we'll drive down to Mississippi to spend a few days with his family and see T.S.O. and then back up for Christmas Eve. Christmas has never been so much fun! Where is the snow I'm ready!!!

Except I haven't done everyone elses christmas shopping and I really hate skipping over christmas. you know that.

My internet has been dead.

I'm taking a Greyhound from Indy to Milwaukee this weekend. Corey's been telling me it's going to suck but I've ignored him, but today I read a bunch of horror stories about riding greyhound and now I fear for my life. This is going to suck so hard. I'm scurred, for real. There is going to be three hours where I will be stuck in Chicago at five a.m..
Someone tell me your awesome greyhound experience, please. Reassure me that I will live to see Tuesday.

a real one:
life isn't as bad as i make it out to be,
as love isn't everything and i can live
without it if it's necessary.
i just don't want it to be.
it's going to be a while before

but that insecurity has lessened because of him.

FEEA Laura Alina Hempel of Tallahassee, Florida

A native of Tallahassee, Florida, Laura Alina Hempel is a star athlete and scholar. Winning two gold medals in the National Latin Exam as well as top prizes in three State Championship track meets, Laura was also named a Jesse Forbes Invitational Outstanding Female Athlete, and received the Heisman and the Gulf Winds Track Club Best Athlete Awards, as well as the Tallahassee Best & Brightest Award in Athletics. Laura served as president of the National Honor Society and the Key Club. The main focus of both organizations is community service, and she organized and led members in improving the school grounds, and raising money and resources for numerous charities. Laura started at Dartmouth College this fall as a freshman, and runs on their cross-country and track teams. She was sponsored by her mother, Jane Eggleston, a scientific researcher and editor with the Department of Interior’s U.S. Geological Survey.

Laura is planning to study Chemistry and would like to pursue a career in Environmental Chemistry. She hopes to earn a PhD and to conduct research. Having studied Spanish for six years, and spent a summer in Argentina as a Rotary Exchange Student, she also hopes to use her language skills in some way in her career.

Laura cites her parents, both scientists, as inspirations. In her essay, she describes Jane’s research into alternative clean energy as a key step in curbing our nation’s dependence on oil. Laura notes the many times her mother came to her classroom to teach earth science and the times Laura joined her mother at environmental workshops and outreach events. “My mom loves the outdoors and is very concerned about the environment, recycling, and air and water pollution," Laura says, "I know that being around her and hearing her talk about these issues has been a positive influence on my interest in environmental issues and in pursuing research.”

Jane’s passion for science has been channeled toward the public good through a 24-year career with the United States Geological Survey (USGS). She says, “I am very proud of the scientific integrity of our agency and the impartial, cutting-edge science that we perform. Many of our results have helped our government better manage America's natural resources and plan for the future.” Despite her commitment to her job, Jane never missed any of Laura’s running events, awards ceremonies or presentations.

Of Laura’s accomplishment, Jane says, “This FEEA Super Scholarship was a complete surprise, and couldn't have come at a better time. We were driving up to Dartmouth when we heard. Laura had planned to apply for a loan in order to have the money necessary for her first year there, in addition to working 15-20 hours a week. Thanks to this scholarship, she does not have to take out a loan this year, which is a big relief.”

I want to make this a food blog, because um, I love food. and I love to cook it. I want to share the awesomeness.
I cook vegan, and all the ingredients I've ever used have been found in Terre Haute. Herbs & Heirlooms is miraculous. So is the Nutrition Quest store on Davis and the Asian Market.

Last night for dinner I made Pad Thai.

Pad Thai

1 16 oz pack noodles
1/4 cup agave nectar
1/4 cup mirin
3 TBS Ketchup *(recipe below)*
3 TBS Tamari or soy sauce
1 1/2 TBS lime juice
1 TBS hot sauce
2 TBS cooking oil
1 pack tofu
2 cloves garlic
1/4 cup chopped nuts
2 cups bean sprouts

Cook noodles according to package.
Whisk together agave, mirin, ketchup, tamari, lime juice, and hot sauce.
Heat oil and fry tofu until brown on both sides (usually about five minutes). Add garlic and fry for another 30 seconds. Combine noodles and sauce, stir, then add tofu. Garnish with nuts and sprouts.


KETCHUP
(I don't eat high fructose corn syrup, so I make my own ketchup.)

1 6-oz. can of tomato paste
1 1/2 TBS vinegar
1 TBS sweetener (most sugar is not vegan, so be careful if you're really that serious about it. I use Florida Crystals, it's a little pricey but it's bone char free.)
1 TBS Braggs/ soy sauce
1/4 tsp dried basil
1/4 tsp paprika
1/4 tsp salt
2 1/2 TBS water

Simmer all ingredients in a saucepan on medium-low heat for about 10-15 minutes, stir often. Let it cool and store in refrigerator in an air-tight container. It will keep for about 2 weeks as long as the lid is on tight.


I made Granola this morning for breakfast and YUM.

Granola

3-4 cups of rolled oats
1/2 cup sunflower seeds
1/2 cup chopped almonds
1/4 cup sesame seeds
1/8 cup ground flaxseed
1/2 cup peanut oil
1 TBS cocoa powder
1 tsp cinnamon
1/3 cup sweetener (see above for sugar caution)
1/2 cup shredded coconut
1/2 cup cranberries
*add any dried fruit of your choice.

Preheat oven to 350. In large bowl, mix together oats, sunflower seeds, chopped almonds, sesame seeds, and flaxseed. In a medium bowl, whisk together oil, cocoa, cinnamon, and sweetener. Add this mixture to the large bowl and combine well. In a lasagna pan, spread mixture evenly and bake for 15-20 minutes until the top layer is browned. Flip over with a spatula and bake for another 8-10 minutes. Mix in dried fruit and let cool, stirring every 10 minutes so it doesn't clump.




On another note, it is 2:30 and I've been watching MADE all day. Does this show make anyone else tear up every freaking episode? They just made some fat bitch into a model and I cried for like, five minutes after she won. wtf?
